• 250g Pork

  • 1 Yellow Pepper

  • 1 Red Pepper

  • 1 Large Onion

  • 2 Small Chillis

  • 2 Garlic Cloves (minced)

  • 2 tbsp. Coconut Oil

  • 1 large ripe Mango (cut in to large pieces)

  • Sea Salt & freshly ground Black Pepper


  • Stir fry pork, onion, peppers, chillis and garlic in coconut oil.
  • Once siftened, add the mango and a couple of tablespoons of water and cook for a few more minutes on a high heat.

  • Add water as required to prevent burning and give a stickiness to the stir fry.

  • Serve with rice noodles and coriander as desired.
