1 Yellow Pepper
1 Red Pepper
1 Large Onion
2 Small Chillis
2 Garlic Cloves (minced)
2 tbsp. Coconut Oil
1 large ripe Mango (cut in to large pieces)
Sea Salt & freshly ground Black Pepper
- Stir fry pork, onion, peppers, chillis and garlic in coconut oil.
Once siftened, add the mango and a couple of tablespoons of water and cook for a few more minutes on a high heat.
Add water as required to prevent burning and give a stickiness to the stir fry.
Serve with rice noodles and coriander as desired.
