Pork and Mango Stir Fry
1 yellow pepper
1 red pepper
1 green pepper
1 large onion
2 small chillis
2 garlic cloves, minced;
2 tbsp. coconut oil;
1 large ripe mango, cut in to large pieces;
Sea salt and freshly ground black pepper;
Stir fry pork, onion, peppers, chillis and garlic in coconut oil.
Once siftened, add the mango and a couple of tablespoons of water and cook for a few more minutes on a high heat.
Add water as required to prevent burning and give a stickiness to the stir fry.
Serve with rice noodles and coriander as desired.
